Ingredients
  

  • cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • cups milk
  • 1 large egg
  • 3 tsp melted butter (plus extra for cooking)
  • 1 cup fresh blueberries (can substitute frozen, thawed)
  • 1 tsp vanilla extract (optional)

Instructions
 

  • In a large mixing bowl, mix flour, sugar, baking powder and salt together.
  • In another bowl, hit the egg and then beat in milk, melt butter, and vanilla extracts.
  • Pour the wet ingredients into dry material and shake slowly until it is combined. Do not overmix - some lumps are fine.
  • Fold carefully in fresh blueberries to avoid crushing.
  • Let the batsman rest for 5 minutes to allow baking powder to activate.
  • Heat a non-stick pan or grill on medium heat and grease lightly with butter.
  • Put 1/4 cup batsman per pancake on the pan. Cook until the bubbles are formed on the surface and set the edges, about 2-3 minutes.
  • Turn carefully and cook for another 2 minutes or until golden brown and cooked through it.
  • Repeat with the remaining batsman, add more butter to the pan as required.
  • Serve warm with maple syrup, extra blueberry, or your favorite topping.
