Ingredients
  

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken or turkey broth
  • 2 cups cooked turkey, shredded
  • cups egg noodles
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions
 

  • Heat olive oil in a large soup pot on medium heat.
  • Add onion, carrots and celery. Cook for 5-6 minutes until soft.
  • Stir in garlic and cook for 1 minute until aromatic.
  • Pour into the broth, then add chopped turkey, thyme, bay leaf, salt and pepper.
  • To bring a boil, then reduce the heat and boil for 10 minutes.
  • Add egg noodles and boil the noodles for another 8–10 minutes or until the tender is tender.
  • Remove the bay leaf. Adjust the spice if needed.
  • Stir in the chopped parsley and let it rest for 5 minutes before serving.
