Ingredients
  

  • ½ cup white rice (short or medium-grain preferred)
  • 4 cups whole milk (or 3½ cups milk + ½ cup cream)
  • cup granulated sugar
  • 1 tsp vanilla extract
  • 1 egg (optional, for added richness)
  • ¼ tsp salt
  • Optional toppings: ground cinnamon, raisins, or chopped nuts

Instructions
 

  • In a medium saucepan, mix rice, milk and salt. To bring a gentle boil on medium heat.
  • For about 25-30 minutes, until the rice becomes too soft, for about 25-30 minutes, reduce the heat in the boil and the mixture became thick.
  • Stir in sugar and continue cooking for another 5 minutes.
  • (Alternative) In a small bowl, beat the eggs. Stir in a few tablespoons of hot pudding, then put the egg mixture back into the pot. Cook 2-3 and minutes.
  • Remove from heat and stir in vanilla extracts.
  • Allow the rice pudding to relax for 10 minutes before serving. Serve warm or cold, if desired, top with cinnamon or fruit.
