Ingredients
  

  • 4 large potatoes (peeled & diced)
  • 1 onion (chopped)
  • 3 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt & pepper to taste
  • Chopped chives & shredded cheese (for garnish)

Instructions
 

  • In a large pot, melt butter on medium heat.
  • Sauce onion and garlic until aromatic.
  • Add diced potatoes and broth. To bring a boil.
  • Boil the potatoes for 20-25 minutes or till it is tender.
  • Use immersion blender for a creamy texture (optional).
  • Stir in cream. Weather with salt and pepper.
  • Garnish with chivs and cheese. serve hot!
