- 4 large potatoes (peeled & diced)
- 1 onion (chopped)
- 3 cloves garlic (minced)
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- Salt & pepper to taste
- Chopped chives & shredded cheese (for garnish)
In a large pot, melt butter on medium heat.
Sauce onion and garlic until aromatic.
Add diced potatoes and broth. To bring a boil.
Boil the potatoes for 20-25 minutes or till it is tender.
Use immersion blender for a creamy texture (optional).
Stir in cream. Weather with salt and pepper.
