- 4 cups sliced cucumbers
- 1 medium onion, thinly sliced
- 1 tablespoon salt
- 1 cup sugar
- ½ tsp turmeric powder
- ½ tsp celery seeds
- 1 tsp mustard seeds
Prepare Cucumbers and Onion: Add the onions and slicedcucumbers in a big mixing bowl. Salt them and toss. Allow to dry 1 hour toremove surplus water.
Drain and Rinse:When they have rested, run the cucumbers and onions under cold water and drain thoroughly with a colander.
Make the Brine:Combine vinegar, sugar, turmeric, celery seeds and mustard seed in a sauce pan. Bring to boil over medium heat until the sugar is completely dissolved and stir periodically.

Cool and Store:Put the mixture into an airtight container or sterilized mason jars. Seal when it is fully cooled.
Refrigerate:Refrigerate at least 24 hours before serving.
