Ingredients
  

  • For the crust:
  • cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup unsalted butter, cold and cubed
  • 6-8 tbsp ice water
  • For the Filling:
  • 6-7 medium apples (Granny Smith, Honeycrisp, or a mix), peeled and sliced
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 tbsp all-purpose flour
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tbsp butter, cut into small pieces

  • 1 egg (for egg wash)
  • 1 tbsp milk (for egg wash)

Instructions
 

  • Make the crust:
    In a large bowl, whisk together flour, salt, and sugar.
    Cut in the cold butter, using a pastry cutter, until the mixture resembles coarse crumbs.
    Gradually add ice water, mixing just until the dough holds together.
    Divide the dough into two discs, wrap with plastic, and chill for at least one hour.
  • Prepare the filling:
    In a large bowl, toss together sliced apples, sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla. Let stand for 15 minutes.
  • Assemble the pie:
    Preheat the oven to 425°F (220°C).
    Roll out one dough disc and line the pie dish with it. Fill with the apple mixture and dot with butter.
    Roll out the second dough disc and place it over the filling. Trim and crimp the edges. Cut slits to allow for steam to escape.
    Prepare egg wash by whisking together egg and milk. Brush over the top crust.
  • Bake:
    Bake for 15 minutes at 425°F, then reduce the temperature to 375°F (190°C) and bake for 40 to 45 minutes, or until golden and bubbly.
    If edges brown too soon, cover with foil.
  • Cool:
    Let the pie rest at room temperature for at least 1 hour before serving.
