- 6 medium apples (Granny Smith or Honeycrisp), peeled, cored & sliced
- ¾ cup granulated sugar
- ¼ cup brown sugar
- ¼ cup cornstarch
- 1½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- ⅛ tsp salt
- 2 tbsp lemon juice
- 1 cup water
- 1 tsp vanilla extract (optional)
In a medium saucepan, add water, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg and salt. Whisk until smooth.
Place the saucepan on medium heat and stir continuously until the mixture starts to thicken, about 3-5 minutes.
Add chopped apple and lemon juice. Stir to coat apples.
Cover and boil on low heat for 10-12 minutes, sometimes stirring, until the apple is tender, but not emotional.
