Ingredients
- 2 tbsp olive oil
- 1 small onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken or turkey broth
- 2 cups cooked turkey, shredded
- 1Β½ cups egg noodles
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (optional)
Instructions
- Heat olive oil in a large soup pot on medium heat.
- Add onion, carrots and celery. Cook for 5-6 minutes until soft.
- Stir in garlic and cook for 1 minute until aromatic.
- Pour into the broth, then add chopped turkey, thyme, bay leaf, salt and pepper.
- To bring a boil, then reduce the heat and boil for 10 minutes.
- Add egg noodles and boil the noodles for another 8β10 minutes or until the tender is tender.
- Remove the bay leaf. Adjust the spice if needed.
- Stir in the chopped parsley and let it rest for 5 minutes before serving.
