  • Graham crackers / Digestive biscuits – 1 ½ cups (crushed)
  • Butter (melted) – ½ cup
  • Cream cheese – 8 oz (225 g, softened)
  • Sweetened condensed milk – 1 can (14 oz / about 400 g)
  • Fresh lemon juice – ½ cup
  • Lemon zest – 1 teaspoon
  • Whipping cream – 1 cup (whipped)
  • Vanilla extract – 1 teaspoon

Instructions

  1. Make the crust- Combine the soured graham crackers and melted butter.
  2. Add in condensed milk, lemon juice, lemon rind, and vanilla essence.
  3. Fold in whipped cream -Fold in whipped cream lightly and fluffy.
  4. Fill the pie crust- Pour filling on the cold crust and fill to the edges.
  5. Garnish & serve: Put on top either extra whipped cream, lemon zest, or lemon slices to serve.
