Instructions
 

  • Make the crust:
    In a large bowl, whisk together flour, salt, and sugar.

    Gradually add ice water, mixing just until the dough holds together.
    Divide the dough into two discs, wrap with plastic, and chill for at least one hour.
  • Prepare the filling:
    In a large bowl, toss together sliced apples, sugars, cinnamon, nutmeg, flour, lemon juice, and vanilla. Let stand for 15 minutes.
  • Assemble the pie:
    Preheat the oven to 425°F (220°C).
