Ingredients
  

  • 4 cups sliced cucumbers
  • 1 medium onion, thinly sliced
  • 1 tablespoon salt
  • 1 cup sugar
  • ½ tsp turmeric powder
  • ½ tsp celery seeds
  • 1 tsp mustard seeds

Instructions
 

  • Prepare Cucumbers and Onion: Add the onions and slicedcucumbers in a big mixing bowl. Salt them and toss. Allow to dry 1 hour toremove surplus water.
  • Drain and Rinse:When they have rested, run the cucumbers and onions under cold water and drain thoroughly with a colander.
  • Make the Brine:Combine vinegar, sugar, turmeric, celery seeds and mustard seed in a sauce pan. Bring to boil over medium heat until the sugar is completely dissolved and stir periodically.
  • Add Vegetables and Brine:Put the drained cucumbers and onions to the saucepan. Bake 5 minutes to blend the flavors.
  • Cool and Store:Put the mixture into an airtight container or sterilized mason jars. Seal when it is fully cooled.
  • Refrigerate:Refrigerate at least 24 hours before serving.
