For the cookie dough:

  • 1 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1 egg yolk
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour

For the pecan filling:

  • 1 cup pecans (finely chopped)
  • 1/2 cup brown sugar
  • 1/4 cup heavy cream (or milk)
  • 1 tbsp butter (melted)
  • 1/2 tsp cinnamon (optional)

Instructions:

1. Make the cookie dough:

  • In a big bowl, beat the butter and brown sugar until light and fluffy.
  • Stir in egg yolk and vanilla. Mix well.
  • Turn out onto a lightly floured work surface and gradually mix in flour and salt to form a soft dough.
  • Wrap the frosting in plastic wrap and refrigerate for 30-60 minutes.

2. Prepare the pecan filling:

  • In a small bowl, combine pecans, brown sugar, cream, melted butter, and cinnamon.
