Ingredients:

  • 3 ears of corn, grilled or roasted, kernels removed
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro, chopped

Lime Dressing:

  • Juice of 2 limes
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions:

  1. Combine all servings of mixed greens fixings in a bowl.
  2. Whisk dressing fixings and pour over a serving of mixed greens.
  3. Hurl delicately and serve chilled or at room temperature.

  • 2 ripe peaches (halved and pitted)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 cups arugula or mixed greens
  • 1 ball of burrata cheese
  • 1–2 tablespoons balsamic glaze (or balsamic vinegar)
  • Fresh basil leaves (for garnish)
  • Optional: toasted walnuts or pecans for crunch

Instructions:

  1. Grill peach:
    The brush peaches are accompanied by olive oil and sprinkled lightly with salt.
    Grill a warm grill or grill pan for 2-3 minutes per side, until the grill marks appear and the peaches become soft.

  2. Gather salad:
    Place the arugula or greens on a serving plate.

    Add grilled peach slices.
    Tear the burra gently and place it on top of the salad.

  3. Finish and serve:
    Bind drizzle with balsamic glazes or vinegar.
    Sprinkle some torn pepper and torn basil leaves.
