  • 2 cups cauliflower florets
  • 2 cups shredded cooked chicken

Ingredients:

  • 1 lb (450g) Italian sausage (mild or spicy, as per taste)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2–3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 3 cups chopped kale
  • 1 medium cauliflower, cut into small florets (potato substitute)
  • Salt and black pepper to taste
  • Optional: red pepper flakes for heat, grated Parmesan for topping

Instructions:

  1. Sauté the sausage: heat some oil in a large pot, and fry the sausage on medium heat. Cut it into little dice and fry till brown. Remove and keep.
  2. Saute Veggie: Put the chopped onion into that very same pot and sauté it. Sauté to tender, 3-4 minutes. Add in garlic and foam it once more in 30 seconds.
  3. Add cauliflower and broth. Add the cup of cauliflower florets and pour in the chicken broth. Bring it to a boil and then reduce the heat to medium-low and allow to simmer till the cauliflower is tender (10-12 minutes).
