  • ¼ Cup coconut flour
  • ½ cup unsalted butter, softened

Instructions
 

  • Prepare the oven in 350 o F (175 o C) and cover a baking sheet with parchment paper.
  • Cream, butter, erythritol and vanilla in a mixing bowl until smooth.
  • Add the egg and beat it.
  • Whisk almond flour, coconut flour and baking soda in a different bowl.
  • Slowly add the dry ingredients into the wet ingredients.
  • Add sugar-free chocolate chips.
  • Optional: Refrigerate dough (30 minutes) to have firmer cookies.
  • Roll into balls and the scoop dough and place it on the baking sheet that is ready.
  • Bake 12-15 minutes with edges being light golden.
  • Cookies should be left to cool then served.
