Ingredients:

  • 20 jumbo pasta shells
  • 2 cups ricotta cheese
  • 1 cup cooked spinach (squeezed dry)
  • 1 egg
  • ½ cup grated Parmesan
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella

Instructions:

  1. Cook shells until al dente.
  2. Blend ricotta, spinach, egg, and Parmesan.
  3. Stuff shells and put them in a heating dish with sauce.
  4. Best with mozzarella and heat at 375°F for 25 minutes.

2. Zucchini Noodles (Zoodles) Recipe

Ingredients:

  • 2–3 medium zucchinis (spiralized)

11. Cucumber Sandwiches Recipe

Ingredients:

  • 1 medium cucumber (peeled and thinly sliced)
  • 8 slices of white or whole wheat sandwich bread (crusts removed)
  • 4 tbsp cream cheese (softened)
  • 1 tbsp mayonnaise (optional for extra creaminess)
  • 1 tsp fresh dill or mint (chopped, optional)
  • Salt, to taste
  • Black pepper, to taste
  • Butter (optional)

Instructions:

  1. Prepare the cucumber: Wash and peel the cucumber. Put thin pieces in dizziness or strips.
  2. Cream spread: In a bowl, mix soft cream cheese, lemon juice, chopped dill (or chives), salt, and pepper. Mix until smooth and well combined.
  3. Prepare bread: If desired, give the bread slices a light coating. Spread a generous layer of cream cheese mixture on one side of each slice.
  4. Gather sandwich: Keep cucumber slices evenly on more than half of the bread slices. The remaining slices to make a sandwich, top with the cream cheese bottom side.
  5. Cut and serve: If liked, trim crusts. Cut into small, clean fingers or triangles.
  6. Serve immediately or cold for a few hours before serving.

12. Sautéed Garlic Green Beans Recipe

Ingredients:

  • 1 lb (450 g) fresh green beans, trimmed
  • 2 tablespoons olive oil (or butter)
  • 3–4 garlic cloves, minced
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon lemon juice (optional, for freshness)
  • Red pepper flakes (optional, for a little spice)

Instructions:

  1. Bring some water to the boil and boil the green beans. Blanche in boiling water about 3 -4 minutes until they are bright green and just tender. Drain, and reserve.
  2. In a frypan over a medium heat add olive oil (or butter).
  3. Add minced garlic and saut the garlic briefly until fragrant (approximately 30 seconds), be careful not to allow the garlic to burn.
  4. Add the blanched green beans to skillet and stir.
  5. Season to taste with salt, black pepper and red pepper flakes (if using).
  6. Add pepper and additional water, sautee another 3 4 minutes until beans are tender crisp.
  7. Add lemon juice to drizzle before serving to add more flavor.
