Ingredients
- 3 cups cooked and cooled white or brown rice
- 2 tbsp vegetable oil (or sesame oil for extra flavor)
- 2 large eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, sliced
- 2-3 tbsp soy sauce (to taste)
- 1 tbsp oyster sauce (optional)
- 1 tsp minced garlic
- Salt and pepper to taste
Instructions
- Prepare the material: If using the remaining rice, break any clump. All the material prepared quickly as cooking is ready.
- Cook the eggs: Heat 1 tbsp of oil in a large pan or make a pan on medium-high heat. Pour into the beaten egg and scramble until the bus sets. Remove and set one side.
- Sauté Vegetables: Add the remaining oil to the skillet. Add garlic and cook for 30 seconds. Stir in mixed vegetables and cook for 2-3 minutes till the tender.
- Add rice: Add rice cooked to the pan. Stir for 3-5 minutes, allows any clump to break and rice to be mild to crispy.
- Season: Stir in soy sauce and oyster sauce (if using), adjusting to taste. Add scramble eggs and green onions back. Toss everything together until it becomes well combined and hot.
