Ingredients
  

  • 3 to 4 Ibs chuck roast
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1 large onion, sliced
  • 3 cloves garlic, minced
  • 3 large carrots, peeled and cut into chunks
  • 2 stalks celery, chopped
  • 1 cup beef broth or stock
  • 1 cup red wine (optional)
  • 2 sprigs fresh rosemary or thyme
  • 2 bay leaves

Instructions
 

  • Prepare the roasted: Pat rost dry with paper towels. The weather with leniency with salt and pepper on all sides.
