- 3 to 4 Ibs chuck roast
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 large onion, sliced
- 3 cloves garlic, minced
- 3 large carrots, peeled and cut into chunks
- 2 stalks celery, chopped
- 1 cup beef broth or stock
- 1 cup red wine (optional)
- 2 sprigs fresh rosemary or thyme
- 2 bay leaves
Instructions
