Ingredients:

For the Cake:

  1. 2 ½ cups (310g) all-purpose flour
  2. 2 ½ tsp baking powder
  3. ½ tsp salt
  4. ¾ cup (170g) unsalted butter, room temperature
  5. 1 ¾ cups (350g) granulated sugar
  6. 4 large eggs
  7. 1 tbsp pure vanilla bean paste (or vanilla extract)
  8. 1 cup (240ml) whole milk

For the Vanilla Buttercream:

  1. 1 cup (227g) unsalted butter, room temperature
  2. 4 cups (480g) powdered sugar, sifted
  3. 2–3 tbsp milk or heavy cream
  4. 2 tsp vanilla extract
  5. Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (165°C). Grease and line two 8-inch round cake pans.
  2. Blend the dry ingredients: Whisk the flour into a bowl, and add the baking powder and salt.
  3. Beat the butter and sugar together: Beat the two ingredients until smooth and creamy.
  4. Add eggs and vanilla: blend the eggs in one by one and add in some vanilla paste as well.
  5. Add milk and dry ingredients: add the nest in of our ingredients (especially pecans), alternating with a few small amounts of milk at each stage.Sift the flour and baking powder onto butter mixture then stir in gently, along with milk.
