Ingredients:

For the Chicken:

  1. 1 whole chicken (4-5 lbs)
  2. 2 tbsp olive oil or melted butter
  3. 1 tsp salt
  4. 1 tsp black pepper
  5. 1 tsp garlic powder
  6. 1 tsp paprika
  7. 1 lemon, halved
  8. 4 garlic cloves, minced
  9. 1 tbsp fresh rosemary or thyme

For the Mashed Potatoes:

  1. 4 large potatoes, peeled and cubed
  2. ½ cup milk
  3. 4 tbsp butter
  4. Salt & pepper to taste

Instructions:

  1. Preheat oven to 200°C.
  2. Rustic chicken: Rub chicken with olive oil, salt, pepper, garlic powder, and paprika. Stuffed with lemon halves and herbs.
  3. Put in a roasting pan and bake in the oven for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
  4. For mashed potatoes: Boil potatoes until soft, drain, then mash with butter, milk, salt and pepper.
  5. Roast chicken with mashed potatoes.

2. Spaghetti with Meatballs Recipe 

Ingredients:

For the Meatballs:

  • 1 zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1/2 red onion, chopped

  • In a small bowl, add olive oil, lemon juice, garlic, parsley, salt, and pepper.
